Spring Potatoes & Peas


  • Half a pound of New potatoes, rinsed and halved
  • 3 cups of fresh spring peas, or snow peas
  • 1 shallot, peeled and sliced thin
  • 1 tablespoon of olive oil
  • 1/2 stick of butter
  • 1/2 cup of yellow pepper, chopped
  • 2 tablespoons of fresh cilantro
  • 2 tablespoons of chopped green onions
  • 1 teaspoon of lime juice
  • 1/2 tsp pepper
  • 1/4 tsp salt

Boil potatoes in salted water until fork tender. Drain, reserve 1/2 cup of the water and set aside. In a large skillet add butter and olive oil and saute peas, shallots, and green onion over medium heat for about 5 minutes. Then add potatoes, reserved water, lime juice and fresh cilantro, and mix properly. Cover and simmer for about 2-3 minutes. Serve with a sprinkle od parmesian cheese.
